Pumpkin gone nuts


Serves 1p.

– 1/2 butternut pumpkin
– 3 small potatoes
– 3 tbsp olive oil
– 1/2 tbsp balsamic vinegar
– Fresh rosemary
– Thyme (fresh or dried)
– Pepper & salt
– 1/2 tbsp honey
– 1/2 red onion
– (optional) Chicken fillets
– Nut mixture

1. Mix the olive oil, balsamic vinegar, onion, honey and spices in an oven tray.
2. Cut the butternut, potatoes (and chicken) into small pieces and mix them in the olive oil mixture.
3. Put the tray in a preheated oven. Let it bake for 30 minutes at 220°C.
4. Before serving it, top off with some chopped nuts.
